Wheat Free Juggary Brownie

We shared these fudgey healthy brownies after our healing meditation on Monday at The OM SPACE on Yogi Bhajan Birthday. They are heavenly and do not use sugar or wheat flour. My wonderful mother Sita created this recipe using kitual juggary and one day whilst baking I ran out of wheat flour so I substituted millet or kurakkan flour which made them even denser and great for those who do not want to eat processed wheat flour. Fox tail millet or kurakkan is a wonderful healthy alternative to wheat flour.

FOR 12 BROWNIES YOU NEED
INGREDIENTS
100g of 70% Dark Chocolate
60z of dark cooking chocolate
1 pack of unsalted butter
3 free range eggs
7oz of kitual juggary grated
2oz of kurakkan flour (millet flour)
1 teaspoon of baking powder
1 teaspoon of vanilla essence

Pre heat the oven to 160 degrees. Now put the chocolate and butter into a metal bowl and melt all the ingredients over a double boiler. Do not let the metal bowl touch the boiling water ,the steam should melt the butter and chocolate until it becomes smooth and silky. Do this process gently.

Now whisk your eggs until they are pale and really fluffy, add the vanilla. Add the juggary a little at a time until it is glossy and well combined. Once the chocolate mixture is cooled enough for you to touch add this to the egg mix and stir until smooth. Finally sieve in the kurakkan flour and baking powder.

Pour the mixture into a square 9 inch tin lined with baking paper. Bang a few times to bring the bubble to the surface and now bake for 15-20 until a crust forms but the mixture is still gooey inside and cool for 1 hr before eating to allow all the juggary to settle and become gooey.
